Oven dried tomatoes are very easy to make and the result is delicious. I had some not-quite-ripe tomatoes which were rather bland so I baked them in the oven to increase the flavour. They were still very moist after 1.5 hours of baking but the flavours were more exaggerated.
Add to pasta or salad.
- 4 tomatoes
- 2 tsp oil
- pinch of salt
- drizzle of olive oil
- Preheat the oven to 110 degrees Celsius.
- Wash the tomatoes then cut in half.
- Place them in a greased tray skin side down, then drizzle with olive oil and season with salt.
- Bake on 110 Celsius for 1 hour and 30 minutes.
