Zucchini fritters vegan gluten free recipe

Delicious, light and oh so easy, this zucchini fritter recipe is vegan and gluten free.

I served the fritters with store bought hummus and oven dried tomatoes I prepared the night before. Sundried tomatoes would work well too, although their flavour is more intense than the ones I used.

Delicious vegan gluten free fritters served with hummus and oven dried tomatoes. Perfect for breakfast, lunch or a light meal. Serves 4 people.
  • 4 zucchini
  • 2 tbsp oil
Flax/chia egg
  • 1 tsp chia seeds, ground
  • 1 tsp flax seeds, ground
  • 4 tbsp warm filtered water
Dry ingredients
  • ½ cup rice flour
  • ½ cup buckwheat flour
  • 1 tsp vegetable stock powder
  • 1 tsp oregano
  • ½ tsp thyme
  • ½ tsp sage
For cooking
  • olive or coconut oil
  1. Wash, peel then grate zucchini.
  2. Heat up oil in a pan and quickly sautee zucchini, make sure it’s not cooked through.
  3. In the meantime create a flax/chia egg – add the warm water and ground chia and flax.
  4. Add flour and other ingredients to zucchini, add the flax/chia egg. Mix through thoroughly and leave rest for 10 minutes.
  5. Heat a frying pan and lightly oil.
  6. Spoon the mixture to the frying pan. Cook for 4 minutes on each side.
  7. Once the fritters are done, top with hummus and oven dried tomatoes.
  8. Serve immediately.
